I wonder if, in the case of my manager, since he has strengths in offense and defense, if changing my training priorities from Plate Discipline to Defense will take better advantage of his strengths. Will lining up manager strengths and training accelerate my team's defensive training?

The way I always understood managers' description was, the only stat that affects training is the player development stat. The other three affect team performance on the field, not the training. So I don't think his higher defense stat will help you train defense faster, but it will help your players defend better during games.

I'm curious if anyone else understands it the way you did.

Endrju is correct, player development helps training, offense gives an increased chance of a positive result at the plate, and defense does the same in the field.
